Take all these fresh vegetables and make a wonderful dish. Don't know what it is called, I made this several years ago when I had an abundance of ingredients.
Cut the onion in slices, chop the tomato, zucchini and the basil.
Italian seasoning, fresh ground pepper, salt, olive oil and butter.
Put the olive oil and butter in a hot skillet. When the butter melts add the onions and zucchini and saute until tender, about 5 minutes.
Add the tomatoes and cook about 2 more minutes.
Add the basil, let cook another minute, stir well and you are done.
Eat and enjoy. If you have any leftovers the next day it is good served over pasta.
Thanks for dropping by and have a blessed day.

We do this a lot!! Sometimes use eggplant instead of squash and we serve it on pasta!

ReplyDeletethat looks delish.... You can serve that with a bit of chicken , I bet that would be great too... Wonderful way to use the veggies from your very own garden. Mica/The Child's Paper
